Michael began his career in the dairy and meat processing industries, working on over a dozen farms and facilities across the USA, France, Switzerland and Italy. He received his formal training in dairy and meat processing at l’istituto lattiero caseario e delle tecnologie agroalimentari (Italy), and has managed operations for food facilities in France and New York City. Michael is a Lead Instructor for FSPCA PCHF, PCAF and FSVP courses and a registered SQF trainer. He has served as a panelist and presenter at food safety conferences and seminars across the United States and abroad. Michael, along with his identical twin brother, Charlie, is also an accomplished television personality as a Food Network Chopped Finalist and Winner of the Great Food Truck Race (Series 7).
